Not sure where my problems at. Start the truck, idles like crap. Hit the throttle once, it fast idles just fine. Let fast idle a bit, hit the throttle to kick off fast idle and it won't idle, tries to die. Feather the throttle a bit and the mash it right quick and it goes back to idling just fine. Then drive it a bit and stop and it tries to die again. Am I running to lean?

Once it's running good I can kill it, restart it and I have to mash the throttle once to get it to idle. Won't idle on its own.

It should be closed in the am it's supposed to be in the high 40s overnight. In the morning pump the gas once. Turn the ignition switch to the on position. And wait for a while so the choke coil warms up. Hit the throttle once more and see it open the engine doesn't need to be on for this.

Well I did as you said and no dice. Left the key on for a good 15 minutes and I never could get it to open. Then I started the truck, let it idle like crap for a min, gave it some gas and choke opened and it idled fine.

Ok let's walk through this :) two things you'll need. 1. A volt meter, 2. A vac gauge. With the volt meter find a 12v ignition on power source to feed the choke. It can be under the hood or from the fuse box. Second adjust the air fuel mix screws with the vac gauge connected to a manifold vac source. Practice "seating" the screws on your Eddie. Seating Intel's you screw them in, but don't crank on them when they stop. Basically just finger tighten down till you feel them stop. Then Mark a spot on the screwdriver used. Note this spot as a starting point. Back out each screw 2- 1/2 turns equally. When you get the choke setup right we can walk through the a/f mix screws and if you like timing as well.

Right now your choke sounds like it has no power. Test the wire currently being used with the volt meter. To insure it has 12v. With the ignition on this wire should always have 12v.

If need be you can do as I have and tap off your distributor 12v power wire.

My choke light used to stay on all the time. It randomly started going off recently. Comes on with the key on, goes off when the truck is started. Isn't the choke wire fed off the oil pressure switch? My oil pressure gauge stays pegged out in the 4oclock position. I know, I know, I have to get it fixed, but unsure if it is the switch or the sender or the gauge or the wiring and I'm a piss poor electrician. I'm going to replace every fuse in the fuse box at lunch. Even the ones that aren't blown are rusty and may not be working.

Oh I see... No worries. Let's say it doesn't work cause it doesn't have 12v going to it. Easy simple fix... tap into your distributor wire. Using one of these in the pic. Cut the current choke wire and put it in this connector then tape the other cut part off. This will insure you have 12v going to your choke. Real no need to try and find out what your current issue is (unless you want to) as is probably more then just a fuse.
