Mechanic at a large farm down the street suggested replacing my the old hard leather looking/asbestos shoes. Especially after the one being potentially contaminated from brake fluid

When the rears lock up do they stay locked up after releasing the pedal or do they release after releasing the pedal, just grabby when applied?

Contaminated shoes will definately grab badly and uncontrollably - I had that happen when an axle seal leaked on one of my British cars and also when a rear wheel cylinder failed on a Jeep at one point. They get kind of gummy and sticky (which seems counterintuitive if they get an oily substance on them).

They release with pedal. I guess grabby is a better word than lock up @legopnuematic

If they held on after the pedal is released, that would suggest something like the rear soft line, master, etc.

Since you say they release and just grabby, I'd look at replacing the shoes since when contaminated with oil/fluid they get grabby like @YakkoWarner said.
