I have a 1980 GMC K3500 I want to upgrade the headlights to brighter lights, can I just change the bulbs to LED or do I want to change the entire assembly? Does anyone have experience with the headlight mod?
Thank you in advance.

To do it right would involve replacing more than just the bulbs. The reflectors for the standard incandescent bulbs will not give the proper beam focus to the LEDs and you'll have really bright wide angle floodlamps blinding oncoming traffic.

1980 is the weird year early uses the round 7" bulbs and late went to a rectangle and moved the marker/signal up under it. Later they went to 2 rectangle bulbs a hi and a low beam.

They make a round replacement like this.

The later rectangle version, also the only brand of a LED conversion bulb this size they list.

And no there is nothing else to do or needed these are plug and play.

I almost hit a pedestrian the other night because of the stupid bright lights, and the cars will always stop for me attitude. I was blinded by another cars headlights as a pedestrian decided to step out in front of me,if I had seen him sooner, all good I could have slowed down, but I was blind then, when the lights got out of my eyes is when I saw the pedestrian. Then it was panic braking and the pedestrian looking at me like what is your problem.

I tried Holley Retro Brights and the RF interference made my radio unusable. Ended up swapping for halogens and a new harness from this guy https://www.danielsternlighting.com/ His stuff is worth a read.
First I've heard of that. No radio in mine so no idea if the summit ones would do that or not.

I run the round Summit ones listed above. I like how they work not overly bright better than the standard bulbs for sure and hi and low just seem to be the angle of the light not higher output. The low beam is just the bottom section and points closer in angled down at the road and when you hit the high beam it shuts off and the top comes on and is aimed higher up pointed more straight out in front.

I think that has moor to do with poor aiming Rick, the brightness of a light shouldn’t affect you if they’re not aimed at your retinas.

I am not a fan of the holley retrobrights. The ones I saw on a Jeep a while back stuck out and looked kinda funny. I run Hellas in both my Square that is blown apart and 67 Mustang. They are DOT approved and have great cut offs. Pictures for reference are in my Square.

I don’t want to be that guy, but I’ll spin my propeller hat and be that guy real quick-

1980 non V22 (RPO deluxe front end appearance package) trucks got the same bezels and were 7” round like the 79s, but with the new grille for 1980.

1980 V22 trucks got the squircle headlights. It is not an early/late change, rather an RPO code available for any 1980 model year pickup.

1981+ V22 got dual stacked headlights, non V22 got single headlights.

The V22 RPO would also get one some other things like a chromed grille, bow tie badge instead of the foil badge, etc.

That sounds like one of those "I wish I didn't know this, but it has bitten me before..." kind of things lol

I'll toss in an opinion, the DOT stuff should be good quality and good cutoff, not a guarantee, but a pretty good indicator. Non-DOT stuff may perform well, but may not, and it may get expensive to save that money.
As far as headlights in general, brighter doesn't equal better in every case. Our eyes are amazingly adept at adapting to low light levels, until we get something that triggers us to adapt to bright levels. The best trigger for that is a point source of blue colored light. Get rid of blue, purple, or "bright white/Daylight" LED's in your cab if at all possible. Even just a small blue LED on a phone charger or something can force your pupils to shrink. To Ricko's point, oncoming headlights are increasingly blue point sources that kill our nightvision. Lower temperature/Kelvin headlights help mix your natural night vision and help to not kill other motorist's vision either. If your local government in installing LED streetlights, request that they go for yellow-ish lights vs blue/bright white. Thankfully most manufacturers are offering more streetlights in the lower range and making those more of a default option, but the "Daylight" lights are still common.

It isn't much, but each of us trying to do a little bit to get out of this stupid cycle of blue colored, blinding, badly aimed headlights may eventually make a positive impact.
