If I was compressing air, I would think the pedal would push down closer to the floor before the slave started to move, and therefore when I released the clutch the engagement would happen sooner, giving me a low pedal?

Correct.

Ha, well, just ran an errand for work... throw out bearing is starting to chirp! Before I do anything fancy I will put a new clutch in it... I don't have any leaks, but is it recommended to replace the slave and master cyls, and if so, is there a brand that is suggested for a daily driver that sees no rough use at all?

Read through this post quick, as suggested the disc most likely is worn out.

On many hydraulic clutch systems, when everything else is okay, and the clutch catches high, time for disc replacement.

Well, I see now that the slave cyl is a little wet, maybe normal seepage but I am going to change it the line, and the master anyway, assuming it could be original. When I removed the slave, the rod extended. I could push it back with my hand pretty easily, but there is enough pressure that it must be keeping the throwout bearing against the pressure plate fingers. This does not seem right to me! Thoughts?

I did not read again and assumed everything was new and was fighting that issue. That said I still think it depends where the air in the system is. If it's in the master yes, you won't get full travel, same if it's in the slave. The pedal always seemed to feel "normal" in a hydraulic system unless you have a blowout. But from my experience, the master always seems to self bleed since it's the highest point in the system. So the pedal feels normal but the slave cylinder isn't getting full travel.

I know nothing of the square hydraulic pedal setup, other hydraulic clutches yes. I would imagine theres a return spring that should be somewhere for a hydraulic clutch.
