Sorry if this has been posted in the past, but would like others opinions about the issue at hand. So my 79 I converted over to a serpentine setup with a front belt system off of a 03 4.3 Silverado. Converted old AC compressor to the later model compressor. I have installed new 180 deg thermostat, radiator, water pump, etc. Truck runs and stays at 180 degrees with AC off. With AC on it’s getting up to around 220. Running late model fan. Should I buy dual electric fan setup? Really don’t like electric fans.

Are you running the correct water pump for the serpentine setup?

Clean the condenser and put a pusher fan wired into the AC on it.

^^^^ This also speeds up the mechanical fan. You might get buy with an idle kicker solenoid. But a pusher fan for the condenser wired into the AC was a common factory tactic for AC back in the 80s

you shouldn’t need electric fans or anything fancy to keep it cool with a/c on. Do you have a shroud? What kind of fan are you running now? What radiator?

I’ve never done the conversion described, but if you reverse rotation, do you need a reverse direction fan? Won’t the fan spin backwards? @HUFFINCOSMOLINE is the fan pulling air?
