What's the easiest way to clean the grease and dirt build up on the bottom of my cab, above the transmission. Anyone had any good results, or tricks to doing this?

if the cab is still on the truck I'd get under and scrape it with a scredriver or putty knife to get most of it off then use some degreaser and hose or pressure washr if you got one, even degrease and scrub brush if you can.

If you don't have a pressure washer, throw your ramps in the bed and go to the nearest spray wash. Ramp all 4 corners, then soak it down with the PP or use the engine degreaser stuff from the there, then blast away.
