On a GM goodwrench motor is it better to run a standard performer eps or spend the extra and get the air gap? What is truly the difference? I have a stock cast intake now so anything is better

For a stock 350 , stock heads , small cam you are wasting your money on an rpm.

The performer is just a tick better than stock , imo. and it flows plenty for stock heads. The rpm is more for better heads and higher rpm , you would see not enough or no gain on a stock motor for the extra money for the rpm.

He's not talking about the difference between the Performer (2101/2701) and the Performer RPM (7101 e.g.), but between the Performer (2101/2701) and the Performer Air-Gap (2601).

The answer to the original question is that the Air-Gap manifold allows for more precise control of carburetor temperature, and therefore better carburetion, resulting in better performance and gas mileage, *IF* you use it with an original-style thermac air cleaner. If you use it without the thermac air cleaner, the carb will never warm up in cold weather, and performance and mileage will totally suck.

That's the short answer. The long answer is here.
