I dont think my system has a reciver drier

The dryer is the silver can looking thing attached to the evaporator. But save that for when you are finally connecting it all up to leak test, as they tend to absorb moisture in the air if left open for long. Like Ricko suggested, flush the evaporator out, the goal is to get all the old mineral oil out (assuming you are going with R134a) then add in the correct amount of PAG oil. I would suggest a parallel flow condenser as well.

The general loose rule for oil capacity:
•Compressor- (1 ounce)
•Evaporator - (3 ounces)
•Condenser - (1 ounce)
•Accumulator (2 ounces)

Oc does ight(it sometimes gets comfortable or is "bearable") in the cab.
However it's so damn hot here that I can't run the ac at a stop, otherwise the truck will start to get really hot.
I've alrety got electric fans on the truck.
Any suggestions on how to keep it cooler?

How old is your radiator? Is it old and maybe a little plugged up?? Maybe it’s time for a replacement ?

Put a stock fan,fan shroud, and fan clutch back on it. Put a n electric fan as a pusher in front of the condenser wired to the fan clutch, when the AC kicks on you've got an additional fan.
