When you go to pick up another set of spark plugs, spend the $4 and grab a new PCV valve. They can cause issues if they are faulty.

are the spark plug wires on right and in the correct order? sounds like its misfiring, and whats shooting up out of the carb? did you check the timing yet? time in, then adjust the carb ... did you redo a compression test after your uncle adjusted the valves?
