Can you get a few inches of lift out of using shocks that have springs on them? (AKA struts)

Coil over shocks are not (AKA Struts) yes you could add Coil overs and gain some height,I'm assuming you are working on a c10 it would be cheaper and easier to add spacers to your existing springs. Any circle track supply place will have them,I'd assume Jegs,Speedway and Summit also. Adding spacers spacer thickness x 2 is your approximate lift. Try searching random truck kid c1oh he lifted his C10 ,6 inches with springs and spindles.

Use 52inch rear springs off another truck in the front and a shackle flip in the rear. Should get you 3 or 4 inches.

Redneck engineering. Gotta love it. Please do not entertain a body lift.

Yes of course coil over shocks will increase spring rate and increase ride height.
First they are not struts. Struts provide load capacity in the gas/hydraulic portion.
Second, “a few inches” is either unrealistic or going to be extremely uncomfortable. But mostly, shock mounts are not designed to be load carrying. At least heavy loads.
So temper your expectations on what a coil over shock or air shock can dooo.

Agreed. "lift a few inches" and "cheap" don't go together. Either do it properly with suspension lifts/different spring pack and a lift shackle or run smaller tires till you save up to do it properly
