I have a 75 c20 and a 78 c10
I'm about to slam there two trucks together but here's the big question !!!
I have the option to do a short bed, long bed or flatbed what do y'all think?

So I'm guessing you're gonna plug parts from the '78 into the '75 to keep it emissions exempt? Does that in any way influence your plans for what size box you want or a lack thereof just for the sake of narrowing down your options? As mentioned above, you should do what you want, but you should also think of what's most practical for you in the long run. What you should for sure do is put the later column in so you can do an XJ steering shaft conversion. Plus, if it has any upgrades over the '75 one like tilt, that'll be nice. I'm sure you were already gonna do that, but it's an important item to a lot of people so I thought I'd mention it.
