Rear end chatter

I have a 1984 Chevy K10 I replaced all my U joints 6 months ago. Now when I get up to about 30 mph and accelerating I’m getting a chatter or rattling almost from the rear end. I suspect it’s the pinion bearing but I’d like some opinions from someone who knows what they’re talking about. It is a Gm 8.5 rear end i believe 3.08 gears. Also wondering if I should change the gears out I just put in a 383 stroker I built I have a 700r4 transmission and I run 35 inch tires. I don’t do any towing or hauling . Any insight would be greatly appreciated. Thank you

One piece drive shaft? Two piece? Carrier bearing? If all this looks good including the slip joint if it has one. Put the rear end on jack stands and unbolt the drive shaft and give the yoke/pinion a wiggle up, down, side to side etc. verify it is the issue, pull the rear wheels and check the axle bearings as well.

Verify it is in the rearend sounds do weird things under a vehicle and can sound like they come from one area and are actually from somewhere else.

It is a one piece drive shaft. I will follow your instructions. I just replaced the wheel bearing on the rear End a few months ago That is what I thought the problem was initially.
