What temperature is overheating for a cammed 6.0 LQ4 and what is normal temp supposed to be on a hot summer day?

My truck with a warmed over 5.3 sits at 210 on the gauge (which translates to anywhere from 208-212 looking at the data directly on a laptop) in traffic with both fans running. I've seen it get to 220 a couple times when I didn't managed to get all the air out of the system. I start getting concerned past that.

Every engine is different though, as far as what temp is considered "overheated" and where damage occurs. I personally know a couple NBS trucks with 5.3s that have seen 260 on the gauge with no problems after cool down.
