When the motor is out, spend the time to paint, keep it from rusting and easier to clean and makes you happy every time you get in there.
Absolutely.

In fact, as the truck progresses and I get the parts I wholly intend on also learning to sand blast and do some basic paint/seal work.

For example, the truck bed cross member is rusted through on one side. Once I've got the cross members purchased, I'll replace all of them all at once but only after I've taken the time to make sure the spot won't rust again.

Update for the parts list that is currently installed (more might be on the way as the tear down/rebuild is underway).

BluePrint Engine 383 crate motor? (At least the heads are BPE)

Edelbrock 1407 performer series Carburetor

Hooker comp header-back exhaust

Flowmaster mufflers

Bullet hole 16” wheels (tires are BF Goodrich All-Terrain T/A that I need to replace with some more meat to fill in some of that wheel well void)

Bilstein B8 5100 Monotube rear shocks (https://www.rockauto.com/)

LMC truck Polyurethane cab mounts (PN: 34-0102)
