FYI - the drivetrain and suspension are usually straightforward to restore, and parts are readily available. Quality body shop work is expensive, and finding all the original/ correct parts for interior, trim, special options, etc. is a slow process. Lots of searching parts houses, junkyards and other sources.
For example, a correct 1975 GMC grill is not available from any source I have found, either original or reproduction, so I still use grill from about a ‘79 truck. Nobody ever notices.

I would suggest working on the drivetrain and suspension first so you have a functional, reliable truck that you can use and enjoy any time you like. This might take a little longer due to California emissions. Then drive it for a while and spend time looking for other parts and negotiating with a body shop.

I had my Dad's V3500 restored last year and I did all the mechanical and small part/trim work. I have about $60,000 into it and I still have a few thousand to spend to finish it. Body shop closed and owner retired after he finished his part on my truck. Came out amazing.

My original plan was to use it as a truck. Now I plan to just look at it and drive it around occasionally.
