Does anyone know the part # for the ac delco fuel pump that puts out 60 psi

If you mean the EP381 pump - that part number is 25163473.

for a N/A carb truck? I feel like 60psi is way too high.

Only need 6 1/2-7lbs for a carburetor, unless it's EFI..

Yeah thinking of an lq9 was advised that it needs 60psi to r8
