Why a 5 speed auto? What's wrong with the 4L80-E? Why not the 6L80-E if 4 speeds isn't enough? I'm not even aware of a 5 speed auto for GM.

Sounds like OP is really just wanting an OD trans.
200r4 or 700r4 (better) are the easiest as said.
Other options are more expensive, albeit arguably better.
But I recall several trucks we ran where I worked, at a landscaping nursery with 700r4s. Trucks worked year round and worked hard( albeit all behind anemic engines of the time ). Towing and hauling in the summer and plowing snow in the winter.
I don’t recall ever replacing one. And I was a mechanic there.

The 5-speed Allison was used behind the 8.1L HD trucks as well.
Oh yeah, I forgot all about the Allison. I was thinking GM line up. A bit overkill for sure though. If all he wants is OD, I'd go 4L80-E. Spend the money on the controller and be done. The 4L80-E with controller for less than the cost of 2 700r4 builds and the 4L80-E is likely to last longer than 2 700r4 builds.

If you're not to inconveninced to do some research, as a hot rodder I know that years ago there were several part upgrades and other mods that came out for the 700R4 for street rodders and racing applications. They made them much stouter on the street and did real well on the highway. Any 700R4 you find in any car or truck will not have these parts, you have to order them. But since I don't use a 700R4 I have no idea where.

Since it's been so long the only thing I can think for you to do is email Chevy High Performance magazine, or Super Chevy magazine and they will have have info on the mods for the 700R4 transmission. I know that there were a lot of guys back then who were pulling out their TH350's and putting in the 700R4's to race them because they wanted a four speed to use in place of the four speed stick trans, and wanted the four speeds in a automatic, but found out the trans. couldn't do it. To the rescue came the race parts manf.'ers and had valves and bands and I really don't know what all there was. And with those mods, which are cheap, make the 700R4 a screamer.
