So after my truck gets warm and I drive it a while, I shut it off and it tries to continue running. I know it has to do with the timing but not sure if I need to advance or retard the timing.

typically, your idle speed may be too high and/or your timing may be advanced a little too much. start with your idle speed.

What type of fuel pump do you have? I used to run a Holley red electric and it would diesel all the time, if you are running any electrical fuel pump you have to have a fuel pressure regulator regulating the pressure to what is recommended for your carb.

Mine was doing same thing i replaced header gaskets and carb gaskets . Had gas on intake and you could hear the valves through exhaust. No more running on after its off. Sounds alot better too
