Edit: Figured out the headlight question. But,

Second Q. How is the cab light switch on the doors connected? I want to replace them, but don't want to break what's there. Was hoping it just slid in and out, but mine does not.

Sorry for the silly questions, but I'm still getting familiar with the truck.

the door jamb switch?

It's got a single power wire connected to the back of it and self grounds itself to the cab.

Not quite sure how this all connects. Seems the piece I pulled is missing that long piece, so did I get the wrong part?

Here's the passenger side one:

This side works flawlessly, but the drivers side seems to be on and off

Tried reconnecting the drivers side switch and no light. Seems it doesn't want to reconnect to the wire again

It looks like that plastic piece still connected to the wire is the part that is underneath the long sheath on the new switch.

Try taking the long sheath off, place the plastic wire connecter on the new switch and then reconnect the sheath. If that doesnt work, then you could crimp the wire onto the new switch. Thats how mine were installed instead of having the spade connector.

Its a normally closed grounding switch, so when its pushed in (door closed) the connecetion is open. But as soon as the sheath makes contact, the circuit is complete and the light is on.
