MLS gaskets have proven to be superior and tend to be where head gaskets have gone. They shine in the boosted applications. That being said I do agree an old motor as a daily I'd go with the standard gasket the motor came with. Take an apple out put an apple in for a daily.
Hope your retorque works out for you. That being said you shouldn't have to ever retorque head gaskets in most cases. They are a set and forget for the most part. If you have to go back and retorque either something wasn't done right or something else is going on.
Not to say that it can't work...
just wondering did you get the heads checked for cracks and to see how true they are before replaceing gaskets? what motor is it ? Iron head? Aluminum head?
If you don't have the proper surface finish on the heads and the block the MLS gaskets will leak.

If you plan on using an older trans you need to oblong the flywheel holes slightly to match up to the converter. You will also need to extend the alignment snout on the torque converter, you can buy that for abour 20 bucks. you need engine mounts I recommend going to ict billet they make things...
I have a few sets of gmt 800 seats I looked at them non power ones. Definitely not a quick solution. I had questioned the function after if I were to modify so I abandoned that idea now shop chairs

I used the stops off the 78. Worked on the newer cab. The 78 hinges bolt on the fenders. I just removed the ones off the cab that were for the 81-87. The stop you can see in the picture is off the 78 and fit in to thr factory hole. You will also need the older wiper post assembly they are shorter.
You don't need the dakota digital speed sensor. Just look the pulses per mile of your existing sensor and see if the gauges can be calibrated to that pulses per mile "ppm"
Regarding the clutch master. When i changed to manual I used a factory petal assembly. 2 braces that come of the petal assembly ate used to hold the factory master. I was able yo drill and mount looks 100% factory in factory location and worked well
