My money is an issue with the aftermarket steering wheel adapter. None of the factory levers seem to move when the steering wheel wabbles. If you know what brand wheel & adapter you may be able to find installation instructions and/or a parts list.
Put the thermostat and a thermometer in your least favorite pot, fill with water then turn up the heat, check what temp it opens.
You will also confirm if a watched pot never boils.
I would put one or two drain holes and maybe squirt some "fluid film" type anti corrosion product even though you probably don't need to worry about road salt during winter.
A few decades ago, I had a K30, 4 tire C&C and put an 8 foot bed on it. There was a larger than stock gap between the cab & bed when the axle was centered in the opening.
Maybe move the rear axle a few inches forward for a better look.
