    Have you pulled the distributor?What does the distributor gear and drive tang look like. Did you fill your new pump with oil,or lubriplate something to help it prime? Pull the oil pressure sender see if you are getting oil there.

    Why are you changing th OP switch? That truck should either have 2, 1 for the gauge/light. 1 for the choke. Or a single 3 wire switch.If you have a switch with 2 terminals that is for the choke and not polarity sensitive,but will not cure a gauge or light issue.

    ^^^^ This also speeds up the mechanical fan. You might get buy with an idle kicker solenoid. But a pusher fan for the condenser wired into the AC was a common factory tactic for AC back in the 80s

    You just change the pump and screen. An Ep381 will probably due it. But you'll need to compare what your EFI wants VS. What an EP381 can provide.
