Does anyone have any reference/how-to guides they recommend for a 350? This project will be my first go at a full teardown other than a 3000GT VR4 but that was 16 years ago.

I’ve used the internet to cite procedures and torque specs, but the negative potential there is getting aggregate information from multiple sources, some of which aren’t qualified to give that info in the first place. Something that would probably be good is a modern book with lots of pictures and possibly video aids. I don’t know about you, but the way I learn best is visually with kinesthetic application to seal the deal. Watching someone else do it really combines the two.
