I need some opinions about what kind of aftermarket camshaft and components I can buy and what performance I can get out of it on an 87 tbi 5.7

I would recommend working on your throttle body first, like the ultimate tbi mods listed in the performance section of Fullsizechevy.com, and get the open throttle body spacer and adjustable fuel pressure regulator and pressure gauge setup from CFM-Tech.
I am using a cam thats a step above stock, but does not require any programming, and my Burb climbs steep hills with ease.
Its the Comp Cams PN 12-388-4
IMO, Magnaflow's long case mufflers are a wonderful choice for these older SUV's.

I was interested at one time, but not after seeing the price to get one from CFM.

I wouldnt touch the holly...it expensive, and they leak...just like the edelbrock.
The CFM-tech spacer has an opening thats like a crossover, allowing the engine to take full advantage of both barrels.....kinda sorta like a bigger throttle body. If you mod the engine enough to require a bigger throttle body, find a 454 throttle body at a wrecking yard, and rebuild it, but you will need to open up your intake manifold barrels to 2" each.
Try to optimize what you currently have, no need to spend money on something you may not need.

Yup!
all the swaps/mods I do, are centered on passing CA emissions in the enhanced smog check II areas.

The ones I have seen have something similar to a distributor hold down bracket holding the injectors in. The Rochester Throttle bodies cant tbe beat. Another thing, I think you have to modify your wiring harness to use those aftermarket throttle bodies, and if you ever have an issue with one, you dont have to special order and wait for anything, you can go straight to the local parts store or GM dealership.
