700R4 operational question

I recently picked up an '88 K1500 to drive while I restore my '87 V20. Aside from the '87 (which I haven't driven much do to condtion) this '88 is the first automatic I've owned in about 15 years. Also the first overdrive with a V8 in front of it. My question is this, if I'm traveling at 55-60 mph, should the trans downshift to second if I stomp on it? It feels to me like it should, but I'm not familiar with auto/overdrives anymore. It goes through the gears normally, or at least feels as though it does. I have paperwork stating that it was rebuilt about 5K miles ago, but sat in a garage for about 7 years. The fluid is clean, red, and doesn't smell burnt. Also at the appropriate level. I've followed the directions posted in the links on here for setting the tv able, and it doesn't seem to change. My other concern is, how possible is it for the cable to stretch? When I reset it towards the firewall, and crack the throttle, it only pops forward a few teeth on the adjustment. As if there's almost no adjustment left. So far today, I've tried tightening it up by a tooth or 2 at a time , but haven't felt a change.

That does suck. Makes passing other cars on 2 lane way to sketchy.

Yes it does. If I wasn't about to go full retard on the restoration of the '87, there's a guy on an off-road forum I'm part of that has a manual trans and t-case for a truck like this '88 for $350. The thought hass crossed my mind. Lol.

If you want it to drop into 2nd, why not just bump the shifter down a couple notches?

Guess I'll have to. Just not used to these automatic transmissions anymore.
