I say you should either build up that 250 with a nice cam (Port the head too) or just get Mercruiser 250 from a boat to swap in.
That's actually my next plan once I'm done with the new intake and exhaust; I've got my eyes on a comp 240H grind with timing set that I'd like to put in as well, just gonna hold off a few months so as not to spend all my money at once. I've seen lots of posts on the lump port modifications but I don't think I could do it myself, and I've never taken a vehicle to a shop so I don't know if that's an option either.

There was a lot of back-and-forth on the Holley 390 CFM (8007) and the Edelbrock 500 CFM (1403) and I ultimately went with the Edelbrock, mostly because I've rebuilt them before, I understand them, and the general consensus seems to be that they're more "streetable" and easily worked on by your average DIY mechanic. I've got nothing against Holley, I just didn't know what to expect and am really just looking for reliability and something I can work on. And maybe a little extra power, wouldn't complain about that.
