Overheating issues

Hi all, I was hoping to get some insight into a frustrating problem I've been facing lately. I've been building out an 81 C10 and have run into some strange overheating issues. It's an 87 engine that has been carb converted. Weiand intake, holley 4bbl, HEI distributor, new CW heavy-duty water pump, new 160 degree thermostat, new 3 core radiator, new clutch fan, and new fan shroud.

The truck idles and drives around town fine, however on the highway it gets to excessive temps and has even blown the hoses a couple times.

I've tried both direction water pumps to no avail. It's a V belt system, so I have the CW pump installed currently.

The headgaskets were replaced less than 300 miles ago.

Any help would be appreciated.

I would test the thermostat to see if it's opening. Also check timing on engine.
