I have an 87 350 with TBI on an Edelbrock intake, with the heavy roller cam, Hedman headers. With the AC on my performance seriously suffers, but it can be really finicky without the AC too.

Is there a chip I can swap that might make her run a bit smoother?

EGR? Delete?
It's the roller cam. I did not put it in, but I am trying to figure out why it is running like this =(
It's always been.. rough, since I owned it. It's REALLY bad with the AC on, unless on the highway.
Could be it needs something simpler, I suppose.
