I'm asking because I have flat top pistons and don't want to the piston to hit the spark plugs

Hmmm....
Whats the primary use of the truck?

But a vortec head calls for a .708 and a stock head calls for a .460 but I have flat top pistons and don't want a hole in my piston if the plug is to long

If your valves clear, a standard plug should. Pligs usually dont protrude out of the combustion chamber. Did you have the heads milled?

I think the valves would hit the piston before the plug. Did you put clay on the piston to check clearance before you put the heads on?

You shouldnt have a problem. I have not seen stock Vortec plugs protrude passsed the inside combustion chamber surface.

Tried the short plugs in a set and it didn't run very good. Use the plugs for the vortec heads
