Can anyone lead me to any type of diagram and or explanation
or link on how the heater system works in a 1980 K10, preferably
starting from the switch on the dash.

The design also has quite a few differences for A/C vs non A/C trucks. For example, an A/C truck has a large black housing under the hood for the A/C evaporator, while a non A/C truck has a nearly flat firewall on the passenger side.

Here an explanation of the air flow. Air enters the truck at the yellow arrow at the cowl. If you have an A/C truck, there is a plastic flap here that closes 80% of the fresh air flow off when on Max A/C. the air then comes out of the circle (where your fan motor is located) and into the plastic box (on an A/C truck). The air is cooled then it goes into the hole the red arrow is pointing to. Once back in the cab, the air will continue to the vents (dash, floor or defrost). If you were not cooling the air, the heater core is located inside the rectangular hole and would heat the air if needed.

On the A/C cab, when you turn on Max A/C, in addition to closing the cowl flap, the passenger kick panel door opens to recirculate air.
