I have some seats I'd like to eventually replace with a 60/40 bench from the same era as these(gmt400?), but I'd like to get these seats some new skin. any recommendations?

I'd just look up your local interior/upholstery shop first. They will likely have a better line on the right materials. I know some companies sell new seat covers that are close to OEM, but they are so expensive you might as well get a local to do it.

I'd at least start there.

I know my father-in law had his late model Silverado cloth interior redone. The company used Katzkin. I don't know what he paid, but it's a good quality product.

My boss had his 2010 Tahoe interior that was cloth redone in leather at the local Chevy dealership and they did it for $1,200. All the interior for that was a great price. I'd try that first.

I talked with a dealer tech about 2 years ago about a similar situation. They said the same. Around $1200 for a leather conversion. Considering we are talking dealer pricing, that's actually crazy good. I can only imagine cloth would be cheaper.

I'm thinking they can do that because they can still get the OEM skins straight from the factory. They may not be able to do that for an older seat from the 90s or 2000's. Can't hurt to call and ask though.
