I purchased a 1987 GMC V2500 several months ago to use as a plow truck. It's a typical Northern Ohio rust bucket, but it does have a very good frame. I'm hoping to get some good information here and perhaps even provide some too. I believe it's a 350 TBI and the transmission is an automatic. It's a flat bed and the cab emblems say Custom Deluxe which I thought was a chevy thing. It does run but the cab wiring is rather cut up and spliced, with a lot of wires not connected to anything. What type of dash lights should I expect to see when I turn the key to the on position? Right now there are none.

Welcome and glad to have you here! Yes, "Custom Deluxe" is a Chevy thing. On the 81-87 trucks, it was the base trim where Scottsdale was the intermediate, and Silverado was the top trim. When you turn the key, you should see at least one light and up to two. The one that you should absolutely be seeing is a "Service Engine Soon" light. I'd check the bulb first. If it's running okay, it's probably just the bulb. The other light that I figure a lot of people don't see, either, is a "Fasten Belts" light. This is controlled by a module in the convenience center to the right of and above the accelerator pedal. It's maybe a little bigger than a pack of smokes, has little holes on the side facing out, and I've seen them blue and black. Your other two lights are "Brake" that comes on when the parking brake is engaged and "Four-Wheel Drive" that comes on when you shift into 4H/4L.
