The truck I’ve been getting some parts off of the last couple days is a late 70’s model truck, fairly well equipped. I noticed that it has three leaves in the front springs, where mine only has two. Would there be any difference in ride or ride height if I swap the three leaf pack into my truck? What determines which truck got which springs? Both trucks are half ton.

My dad had a '87 K5 Blazer with a HD front spring option. He had 3 leaf springs. I heard it was a popular option for people who wanted to run a snow plow.
His Blazer did sit probably 1" taller than my '86 Blazer did.
His rode rougher though... that was for sure.

My K30 had 3 leaves in front. It still had the factory negative arch to it. I don't think you'd get much more height than the thickness of the third leaf. It will give you more load capacity. My 3" lift springs ride better.

They may be more worn out than your current springs and droop more in the other direction, too.

Sounds like it wouldn’t be worth the time to switch them out then.
